What You’ll Need
Ingredients
- 1lb chicken breast or rotisserie chicken
- 3 cup cooked basmati rice (or jasmine rice)
- 2 eggs (optional)
- 2 garlic cloves
- 3 green onions
- 2 celery stalk
- 2-3 tbsp soy sauce
Equipment I Used
How to Make It
Prepare the Chicken
If using rotisserie chicken, shred the chicken into bite-sized pieces and set aside. If using chicken breast, dice the chicken into small cubes. Heat a frying pan over medium heat with a bit of oil and cook the chicken until fully cooked through and golden brown.

Sauté the Aromatics
In the same frying pan, add a little more oil if needed and heat over medium heat. Add the minced garlic, chopped green onions, and diced celery. Sauté for about 1 minute until fragrant and the vegetables are slightly softened.

Scramble the Eggs (Optional)
If using eggs, push the aromatics to one side of the pan and add a bit more oil to the empty space. Crack the eggs into the pan and scramble them until cooked through. Once done, mix the scrambled eggs with the sautéed vegetables.
Combine the Chicken and Vegetables
If using rotisserie chicken, add the shredded chicken to the pan at this stage. Stir everything together to combine and warm the chicken.
Add the Rice and Soy Sauce
Add the cooked rice to the pan along with 2-3 tbsp of soy sauce (adjust to taste). Stir and toss everything together to ensure the rice is evenly coated with soy sauce and all ingredients are well combined. Cook for an additional 2-3 minutes until the rice is heated through.

Serve and Enjoy
Remove from heat and serve the Chicken Fried Rice immediately. Garnish with additional green onions if desired.
