What You’ll Need

Ingredients

  • 1 flank steak or top sirloin steak 2-3 lbs
  • 1/2 cup low sodium soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 1 tbsp toasted sesame oil
  • 1 tbsp grated fresh ginger root
  • 4 cloves minced garlic
  • 1 tsp chili garlic sauce more or less to taste

How to Make It

Prepare the marinade

In a medium bowl, whisk together the soy sauce, rice vinegar, brown sugar, toasted sesame oil, freshly grated ginger, minced garlic, and chili garlic sauce. Adjust the amount of chili garlic sauce to suit your preferred spice level.

Marinate the steak

Place your flank or top sirloin steak into a shallow dish or zip-top bag. Pour the marinade over the steak, making sure it is fully coated. Seal the bag or cover the dish, and let the steak marinate in the refrigerator for several hours or overnight for the best flavor. The longer it marinates, the more tender and flavorful it will become.

Note: I personally prefer to cut the steak into strips before marinating to help the flavors absorb more deeply and to speed up cooking time.

Heat the skillet

When ready to cook, heat a large cast iron skillet or grill pan over medium-high heat until it’s hot. Lightly oil the pan to prevent sticking.

Remove the steak from the marinade, allowing excess liquid to drip off. Place the steak in the hot skillet and cook for 4-5 minutes on one side, then flip once and cook for another 4-5 minutes for medium-rare. Adjust the cooking time based on your preferred level of doneness.

Rest the steak

Once the steak is cooked to your liking, remove it from the skillet and transfer it to a cutting board. Allow the steak to rest for 5-10 minutes. Resting helps the juices redistribute, making the meat more tender.

Slice and serve

After resting, slice the steak against the grain into thin strips. Serve the steak with your favorite side dishes. It pairs perfectly with steamed white rice, stir-fried or steamed vegetables like broccoli or bok choy, or even with noodles for an Asian-inspired meal. You can also serve it over a bed of mixed greens for a lighter option or alongside roasted potatoes for a heartier dinner.

Ingredients

Directions

  1. Whisk together ingredients for marinade, pour over steak in a shallow dish or zip top bag.  Allow to marinate for several hours or overnight (the longer, the better).
  2. Heat a large cast iron skillet or grill pan over medium-high heat until hot. Lightly oil the pan to prevent sticking.
  3. Place the marinated flank steak in the pan and cook for 4-5 minutes on each side for medium-rare, flipping only once. Adjust the cooking time for desired doneness.
  4. Once cooked to your liking, remove the steak from the pan and let it rest for 5-10 minutes before slicing against the grain.
