  • 1/2 Onion diced
  • 2 cups beef broth
  • 2 Bay Leaves

  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp cornstarch
  • 1/4 cup cold water
  • 12 oz egg noodles

How to Make It

Prepare the steak

Begin by cutting the top sirloin steak into thin strips, making sure they’re evenly sized for consistent cooking. Generously salt the steak strips and set them aside. This resting time allows the salt to tenderize the meat and enhance its flavor.

Brown the steak

Heat a skillet over medium-high heat and melt 1 tbsp of butter. Once the butter is hot and sizzling, add the steak strips in a single layer. Cook each side for about 2-3 minutes until browned. Avoid overcrowding the pan to get a good sear. Once browned, remove the steak from the skillet and set it aside to rest.

Sauté the onions

In the same skillet, using the leftover butter and steak drippings, add the diced onion. Sauté over medium heat until the onions become translucent and soft, about 3-4 minutes. Stir occasionally to prevent burning and ensure even cooking.

Prepare the broth and seasonings

Once the onions are softened, pour 2 cups of beef broth into the skillet. Add the bay leaves, dried thyme, salt, and pepper. Stir everything together to combine. Bring the mixture to a boil over medium-high heat to let the flavors meld.

Thicken the sauce

In a separate small bowl, mix 1 tbsp of cornstarch with 1/4 cup of cold water. Stir until the cornstarch is fully dissolved. Slowly pour the cornstarch mixture into the boiling broth, stirring constantly to avoid lumps. Continue stirring and cooking for a few minutes until the sauce thickens to your desired consistency.

Reheat the steak

Once the sauce has thickened, add the browned steak strips back into the skillet. Stir to coat the steak in the sauce, and let it simmer for an additional 5 minutes to reheat the beef and allow the flavors to come together.

Cook the egg noodles

While the sauce is thickening, bring a separate pot of water to a boil. Cook the egg noodles according to the package instructions, typically around 8-10 minutes. Once cooked, drain the noodles and set them aside.

Serve

Once the beef and sauce are ready, remove the bay leaves from the skillet. Serve the beef mixture over the cooked egg noodles. Garnish with fresh herbs if desired, and enjoy!

Ingredients

  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp cornstarch

Directions

  1. Cut the steak into strips, salt generously and set a side. It will help tenderize the meat.
  2. Over medium high heat brown the steak pieces in a skillet 2-3 minutes per side. Set a side.
  3. In the same skillet sauté the onions until translucent.
  4. Add 2 cups of beef broth into the skillet and add the seasoning. Stir to combine and bring to a boil.
  5. Mix the cornstarch into the 1/4 cup cold water in a separate bowl.  Stir this mixture into the skillet mixture and allow this to cook until the sauce has thickened. Remove the bay leaves.
  6. Add the steak strips back to the skillet and cook 5 more minute to reheat the beef.
  7. While the sauce is thickening, cook the egg noodles in a separate pot based on the package instructions.
  8. Serve the beef mixture over the egg noodles and enjoy!
