- 1/4 cup unsalted butter softened
- 1/2 cup smooth peanut butter
- 1 1/2 cups powdered sugar
- 2 tbsp whole milk or cream
- 1/4 tsp pure vanilla extract

How to Make It
To make the cookies
Preheat the Oven
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
Mix the Wet Ingredients
In a large mixing bowl, combine 1 cup of creamy peanut butter, ½ cup of unsalted butter (softened), and 1 cup of brown sugar. Using an electric mixer or a stand mixer, cream the ingredients together on medium speed until smooth and creamy, about 2-3 minutes.
Note: Make sure the stand mixer is clean and clear of any object before using. My son loves to leave surprises for me every time I use it! Today’s selection was a variety of cars and trucks.

Add the Egg and Vanilla
Add 1 large egg and 1/2 tsp of vanilla extract to the bowl. Continue mixing on low speed until the ingredients are fully incorporated.

Prepare the Dry Ingredients
In a separate bowl, whisk together 1½ cups of all-purpose flour, 1 tsp of baking soda, and ¼ tsp of salt.
Slowly add the dry ingredients to the wet ingredients while mixing on low speed. Continue to mix until a soft dough forms. Be careful not to overmix the dough.

Shape the Cookies
Using a cookie scoop or your hands, form the dough into small balls (about 1.5 tbsp each). Place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.
Flatten each cookie slightly with the back of a fork, pressing down in a crisscross pattern.

Bake
Place the baking sheets in the preheated oven and bake for 9-10 minutes, or until the edges are set and the tops are lightly golden. The cookies may appear soft, but they will firm up as they cool.
Cool
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

To make the peanut butter filling
Cream the Butter
Using a standing mixer, beat 1/4 cup unsalted butter on medium speed until fluffy.
Mix in Ingredients
Add 1/2 cup smooth peanut butter, 1 cup powdered sugar, 2 tbsp whole milk or cream, and 1/4 tsp pure vanilla extract. Mix on low speed until well combined.
Gradually add the remaining 1/2 cup of powdered sugar and continue mixing until the filling is smooth and creamy.

Prepare for Assembly
Once the cookies have cooled, group them into pairs. Use a spoon to evenly spread the peanut butter filling on the bottom cookie of each pair.
Note: I found that using a piping bag without a tip made spreading the filling much easier and gave the cookies a cleaner, more polished look.
Place a second cookie on top of the filling to create a sandwich, gently pressing to secure.

To make the cookies:

- Gradually pour bowl of dry ingredients into the wet ingredients and mix just until combined.
- Divide dough into small balls, about 1 inch in diameter each.
- Place on cookie sheet about 2 inches apart.
- Using the tines of a fork, make a criss-cross pattern in your dough.
- Bake 9-10 minutes, until lightly browned on the edges, but still soft in center.
- Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
To make the peanut butter filling.
- Using a standing mixer, beat butter on medium speed until fluffy.
- Mix in peanut butter, 1 cup powdered sugar, milk and vanilla extract.
- Gradually mix in the remaining powdered sugar until smooth.
- Group your baked cookies into pairs, then use piping bag to spread filling evenly on the bottom cookie for each pair.
- Place a second cookie onto the top of the filling to create a sandwich.
