How to Make It

Prepare the Dry Ingredients

In a large mixing bowl, combine 2 cups of flour, 2 tbsp of sugar, 1 tbsp of baking powder, and ½ tsp of salt. Whisk these dry ingredients together until they are evenly mixed. Set the bowl aside.

In a separate bowl, crack 2 eggs and beat them lightly. Add 2 cups of milk, 2 tsp of vanilla essence, and 1 tsp of almond essence. Whisk the mixture until the ingredients are fully combined. Melt ⅓ cup of butter in a small saucepan or in the microwave, and allow it to cool slightly. Gradually whisk the melted butter into the wet mixture, ensuring it is fully incorporated.

Combine the Wet and Dry Ingredients

Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula or wooden spoon, gently stir the mixture until just combined. The batter should be slightly lumpy—be careful not to overmix.

Rest the Batter

Cover the bowl with plastic wrap or a clean kitchen towel, and refrigerate the batter for at least 1 hour. This resting period allows the batter to thicken and develop better flavor.

Preheat the Waffle Iron

About 5 minutes before you’re ready to cook, preheat your waffle iron according to the manufacturer’s instructions. Lightly grease the waffle iron with non-stick spray or a small amount of melted butter if necessary.

Cook the Waffles

Once the waffle iron is hot, remove the batter from the refrigerator. Give it a gentle stir to ensure everything is well mixed. Pour the batter onto the preheated waffle iron, using a ladle or measuring cup. The amount of batter will depend on the size of your waffle iron, but typically ½ to ¾ cup of batter per waffle works well. Close the waffle iron and cook according to the manufacturer’s instructions, usually 3-5 minutes, until the waffles are golden brown and crispy on the outside. Note: I personally cook my waffles for 3 minutes. Start checking at the 3-minute mark to make sure they don’t overcook.
