  • For the Brownie Layer:
  • 1 cup butter, melted
  • 1/2 cup white sugar

  • 6 tbsp butter, room temperature

How to Make It

For the Brownie Layer:

Preheat and Prep Pan

Preheat your oven to 350°F (175°C). Grease a 8×8 baking pan with butter or oil and set aside.

Mix Wet Ingredients

In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until the sugar is dissolved. Add the eggs and vanilla extract, and mix until smooth and fully incorporated.

Combine Dry Ingredients

Sift in the flour and cocoa powder. Add the salt and stir until just combined, being careful not to overmix.

Fold in 3/4 cup of chocolate chips until evenly distributed throughout the batter.

Melt Chocolate and Butter

Pour Over Peanut Butter Layer

Remove the pan from the refrigerator and pour the melted chocolate mixture over the peanut butter layer. Spread evenly with a spatula.

Allow the chocolate layer to harden by placing the pan back in the refrigerator. For a firmer texture, chill for at least 30 minutes before cutting.

Directions

  1. Preheat oven to 350 degrees. Grease a 8×8 baking pan with butter or oil. Set aside.
  2. In a large mixing bowl whisk together melted butter, granulated sugar, and brown sugar. Whisk until sugar is dissolved. Add the eggs and vanilla extract until smooth and combined.
  3. Sift in flour and cocoa. Add the salt and espresso powder, if using, and stir until just combined. Don’t over mix. Fold in 1 cup of chopped chocolate. Spread evenly into prepared pan and sprinkle the remaining ¼ cup of chopped chocolate on top of the brownies.
  4. Bake for 25-30 minutes on the middle rack in the oven until the brownies are just set to touch. Don’t over bake the brownies. They will set up as they cool. Remove from oven and let cool before cutting into squares. You can sprinkle them with a little flaky sea salt, if desired.

For the Peanut Butter Layer:

  1. Mix together the 1/2 cup of butter, peanut butter and powder sugar until smooth.
  2. Spread over cooled brownies. Let the peanut butter mixture set up in the refrigerator for and hour.

For the Chocolate Layer:

  1. Once cooled it is time to make the chocolate layer for the Buckeye brownies.
  2. Melt the chocolate chips and butter in a double boiler over medium heat till melted.
  3. Pour over the peanut butter layer and let the chocolate harden.
  4. Once the chocolate is set, use a sharp knife to cut the bars into squares or rectangles. Serve and enjoy the decadent combination of chocolate and peanut butter in every bite!
