What You’ll Need

Ingredients

  • 1 lb chicken breast, cut into 1-inch pieces
  • 3 cups broccoli floret
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 onion
  • 4 garlic cloves
  • 1 cup chicken stock
  • 1 cup milk or half and half cream
  • 1 tsp dijon mustard
  • Salt and pepper to taste

Equipment I Used

How to Make It

Prepare the sauce

In a medium-sized bowl or a glass measuring cup, whisk together the chicken stock, milk or half and half cream, Dijon mustard and pepper until well combined. Set this mixture aside. This will form the creamy base for the dish.

Steam the broccoli

In a separate pot, steam the broccoli florets for about 5 minutes, until they are bright green and just tender. Once done, set the broccoli aside. Steaming the broccoli beforehand ensures it cooks evenly and retains its vibrant color.

Cook the chicken

In a large skillet over medium-high heat, add a drizzle of oil (if needed) and cook the chicken pieces until they are no longer pink and have a slight golden brown color, about 5-7 minutes. Stir occasionally to ensure even cooking. Once cooked, transfer the chicken to a plate and set it aside.

Sauté the aromatics

In the same skillet, add the 2 tbsp of butter and allow it to melt over medium heat. Add the diced onion and minced garlic to the skillet and cook until fragrant, about 30 seconds to 1 minute. Stir frequently to prevent the garlic from burning.

Make the roux

Sprinkle 1 tbsp of flour over the onions and garlic, stirring constantly to combine. This creates a roux that will help thicken the sauce. Continue stirring for about 1 minute to cook off the raw flour taste.

Add the sauce mixture

Slowly pour the chicken stock mixture into the skillet, stirring continuously to avoid any lumps. Keep stirring until the sauce starts to thicken and becomes smooth, which should take about 2-3 minutes. Make sure the mixture is well-incorporated before proceeding to the next step.

Add the broccoli

Once the sauce has thickened, add the steamed broccoli florets to the skillet. Stir to coat the broccoli evenly with the creamy sauce, and let it cook for another 5 minutes to allow the flavors to meld together.

Return the chicken to the skillet

Add the cooked chicken back into the skillet, stirring gently to combine it with the sauce and broccoli. Cook for an additional 2-3 minutes until the chicken is heated through and everything is well coated in the creamy sauce.

Once everything is warmed through and the sauce has reached your desired consistency, season with salt and pepper to taste. Serve the creamy chicken and broccoli on its own, or pair it with rice, pasta, or your favorite side dish for a complete meal.
